A Personal Milestone

(Gotta love the ever present muffin top! Ha Ha)

So this morning as Kip and I were laying in bed the girls came over and handed him our wedding DVD and they wanted to watch it so we popped it in. It's a slide show of our engagement pictures and my bridal pictures. One of my goals has been to fit in the pants I wore for my engagement pictures and I still had them hanging in my closet. They are a size 14 so I new I wasn't going to fit into them yet but after watching the DVD I decided to try them on just to see how close I was getting. Much to my shock, both pairs fit me perfectly. One was a pair of dark khakis and another a pair of jeans. So today I am really stoked. I FIT INTO A SIZE 14 PANTS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! AAAAAAAAAAAAAAAHHHHHHHHHHHH!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! I can't believe it. I've been on some kind of high all day because I didn't realize I would fit into those yet. Funny things tho, when I look in the mirror, I look the same to me! Such is life right?

Dinner Ideas

Thanks so much for starting this blog. You are amazing and I'm so glad to have such a great friend for motivation. Thanks for those recipes. I'm excited to try them. The Jello sounds great. OK, so I'm sitting in bed and don't have my cookbooks with me and I'm too lazy to go get them so I don't have my recipes so I'll have to add them later but here is just a taste of what you have to look forward too:
Southwest Tex Mex salad
Sesame Chicken (a family favorite)
Pork and Black Bean Stir fry
Cabbage Salsa
Chicken Parmesan


Angel Lush Cake
1 Angel Food Cake
1 pkg sugar free fat free vanilla pudding
1 can crushed pineapple, not drained
1 container fat free cool whip
Fresh Strawberries

Pour the can of pineapple, juice and all into a bowl. Mix in the package of pudding mix and stir together. Add 1 cup cool whip and mix. Put into the fridge to chill.
Meanwhile, cut the top off of the angel food cake. Spread the pineapple mix over the cake and top with fresh sliced strawberries then replace the top of the cake. Frost the cake with the remaining cool whip and garnish with sliced strawberries. Yummy and light. Makes for a good summer dessert.

Chicken Balls
1 package reduced fat crescent rolls
1 package fat free cream cheese softened
2-3 chicken breasts cooked and cut into small cubes
3-4 stalks green onions chopped
1 can 98% fat free cream of chicken soup

Mix the chopped chicken, softened cream cheese, and green onions together. Place a spoonful in the middle of each crescent roll and pull the dough up around the mixture and form it into a ball. Place on a lightly greased cookie sheet. Bake at 350 degrees until roll is golden brown and fully cooked.

Meanwhile place the chicken soup in a saucepan with just enough water to make it a gravy like consistency and warm it up. Pour over the chicken balls when ready to serve. This is a good and easy meal that we usually like to eat with a green salad and flavored rice.


Just a side note, some things that I have found that I like to eat and are decent points values are fiber bars..only 2 points each and come in lots of delicious flavors. The carmel one is really good. Also, Rhodes rolls are something I like to keep on hand to make because each roll only has 2 points and they make for a good side dish to lots of dinners and soups. A tootsie pop is only 1 point and it satisfies that candy craving and lasts awhile so it makes it well worth the one point. I also like the fat free pringles. The sour cream and onion ones are really good and you can have like 14 chips for 1 point. Rad.

Recipes

Sparkling Jello

Try this for a great treat that is literally zero points. Gabe also loves this so I am willing to bet that so will Hannah and Haley.

Package of your favorite jello
1 Can of Ginger ale pop or just about any soda.

Directions

1. Bring water to a boil package calls for.
2. Pour jello in bowl.
3. Pour boiling water into bowl and stir immediately, till completely
mixed.
4. Add pop for the rest of liquid required. Stir to mix.
5. Refrigerate till solid.


Variations
*You can add any flavors of pop you want. But ginger ale and seltzer
do the best job.
*Adding fruits and candies like gummy worms, will take away from
tasting the bubble
*You can use fruit juices to make your jello.
*To make it more bubbly, use less boiled water, and more pop.
*To make it a jiggler jello, use half of the required liquids."

There are some nifty variations on this trick:

"Cherry Coke Jell-O v2.0

* Small box of Cherry sugar free Jell-O
* 1/2 cup boiling water
* 1/2 cup boiling Coca-Cola
* 1 cup cold Coca-Cola

Mix in the usual way. Beware of the foam; if you let it sit long
enough, the foam will subside.

This alternate recipe uses 4 oz. water and 12 oz. Diet Coca-Cola; in other
words, you can use one standard soda can.

Here we go

Hey there. Getting back into the WW plan was actually easier than I thought. Although portion control can be a little hard from time to time. Love the WW diary on android it makes it so easy. Thanks for that :D. I ate an almond snickers yesterday and then spit it out once it was in my mouth, after tasting it I quickly decided it was not worth my extra points. The funny things we do, but after a few days in the mode if I am already thinking about my points when I am putting things in my mouth doesn't that mean I am on the right track.

Tip: Found out that subway and panda express have some really yummy choices for very low points that fill me up. Also a whole bag of 94% fat free popcorn only about 2 points. My saving grace! :D
